Instead of purchasing packaged food, I have been diligently trying to prepare what we eat with whole food. Since my son has an incredible sweet tooth, so far, my focus has been in making healthier dessert options.
This week, I purchased a popsicle mold so that I could make frozen treats while controlling the amount of sugar used. Our first attempt was to make root beer flavored popsicles. Any root beer recipe sans the carbonation will work. They were a big hit. Original root beer recipes can be quite daunting as the ingredients are not always easy to find so for our first attempt, we used a recipe with simple syrup and root beer concentrate.
Make simple syrup by boiling 1 1/2 cups water, remove from heat and add 3/4 Cup granulated sugar (or artificial sweetener) and mixed until dissolved. Then add 1 1/2 tsp Root Beer Concentrate and 1 liter of water.
*Note: you can use this recipe for drinkable root beer if you use 1 liter of carbonated water. Carbonated beverages do not make good popsicles.
*For a root beer float, place two scoops of ice cream in a tall glass and then slowly pour the drinkable root beer over the ice cream and serve.
